Thai Fried Rice with Microgreens

With lots of Thai chili peppers in the garden this year, this has become a favorite recipe in our house. It's easy, delicious, spicy, and all sorts of microgreens add to the flavor.

Ingredients

  • Day old Jasmine rice
  • Scrambled eggs
  • Thai chili peppers chopped
  • Onions chopped
  • garlic, green peppers, and other vegetables chopped
  • shrimp or other protein of your choice
  • soy sauce and/or fish sauce
  • vegetable and toasted sesame oil
  • Your favorite microgreens!

Instructions

  • Using vegetable oil and toasted sesame oil, stir fry your shrimp or other protein.

  • When nearly cooked, add the eggs and stir fry until they are just set.

  • Set egg/shrimp aside. In the same pan stir fry the peppers and other vegetables until the onions are translucent, not brown. Add the garlic last so it doesn't burn.

  • Add soy sauce and fish sauce to taste.

  • Add the rice and stir fry.

  • Add the shrimp and egg back in.
  • Serve with your favorite microgreens. Wasabi mustard, radish, and arugula fabulous with this dish.
