Using vegetable oil and toasted sesame oil, stir fry your shrimp or other protein.

When nearly cooked, add the eggs and stir fry until they are just set.

Set egg/shrimp aside. In the same pan stir fry the peppers and other vegetables until the onions are translucent, not brown. Add the garlic last so it doesn't burn.

Add soy sauce and fish sauce to taste.

Add the rice and stir fry.

Add the shrimp and egg back in.
Serve with your favorite microgreens. Wasabi mustard, radish, and arugula fabulous with this dish.
