Toast the bread
4 slices bread
Slice the avocado in half and remove the pit. Scoop out or slice the flesh.
2 medium avocados
Drizzle lemon-infused olive oil on the toasted bread.
½ tsp lemon infused olive oil
Spread the avocado over the oil.
Top with a generous portion of your favorite microgreens.
2 cups your favorite Roots 'n Shoots microgreens
Drizzle with balsamic vinegar and top with a bit of sea salt and cheese as desired.
