Omelette with Avocado, Feta, and Microgreens
Egg, avocado, cheese and microgreens make this a hearty breakfast.

Ingredients
- 1 pat butter olive oil works well too
- 3 medium eggs egg whites work well too
- 1 tsp milk
- 1 medium avocado sliced thinly
- sprinkle feta, goat cheese Swiss cheese also delicious
- ½ cup Roots 'n Shoots microgreens your favorite ones. We use onion and brocolli microgreens
Instructions
- Add butter to skillet and heat to medium1 pat butter
- Whisk together the whole eggs or egg whites and the milk3 medium eggs, 1 tsp milk
- Pour egg mixture into the skillet and turn heat to low
- Cook on low until the eggs are set. Transfer to a plate and add avocado, cheese, and microgreens.1 medium avocado, sprinkle feta, goat cheese, ½ cup Roots 'n Shoots microgreens
- Fold in half and garnish with remaining microgreens.
