Pea Shoot Pesto
A delicious homemade Pesto using nutrient rich Microgreens!

Ingredients
- 3/4 cup Pine Nuts
- 3 cups Root 'N Shoots Pea Shoots
- 1/2 cup Roots 'N Shoots Cilantro Microgreens
- 1/4 cup Grated Parmesan Cheese
- 2 cloves Garlic, Chopped
- 3/4 tsp Kosher Salt
- 1/2 cup Extra Virgin Olive Oil
Instructions
- Using a food processor: Combine pea shoots, ½ cup toasted pine nuts, cilantro, Parmesan, garlic, and salt. Pulse until roughly chopped. Slowly drizzle in olive oil with the motor on low; blend well.
