Avocado Toast with Microgreens
Avocado toast is an amazing breakfast or snack with any Roots 'n Shoots Microgreens
Servings: 4 servings
Equipment
- Toaster or toaster oven
Ingredients
- 4 slices bread
- 2 medium avocados
- 2 cups your favorite Roots 'n Shoots microgreens We used radish and Purple Vienna Kohlrabi.
- ½ tsp lemon infused olive oil you can soak lemons in olive oil overnight or just add lemon juice to the olive oil
- balsamic vinegar enough to drizzle on each piece of toast
- sea salt if desired
- fresh grated cheese We used cotija, but parmesan or your favorite cheese will work well.
Instructions
- Toast the bread4 slices bread
- Slice the avocado in half and remove the pit. Scoop out or slice the flesh.2 medium avocados
- Drizzle lemon-infused olive oil on the toasted bread.½ tsp lemon infused olive oil
- Spread the avocado over the oil.
- Top with a generous portion of your favorite microgreens.2 cups your favorite Roots 'n Shoots microgreens
- Drizzle with balsamic vinegar and top with a bit of sea salt and cheese as desired.balsamic vinegar, sea salt, fresh grated cheese
