Peanut Soba Noodles with Basil Microgreens

This is a go-to recipe when I'm looking for something quick and easy yet flavorful.

Ingredients

  • 1/4 cup natural crunchy peanut butter can use smooth peanut butter
  • 1/4 cup rice vinegar
  • 2 Tbsp maple syrup or honey
  • 2 Tbsp untoasted sesame oil
  • 1 1 inch piece of fresh ginger peeled and finely grated
  • 2 Tbsp Thai sweet or spicy chili sauce
  • Sea salt
  • 1 8 oz package of soba noodles cook, drain, and rinse under cold water
  • 1 1/2 cups seasonal greens
  • 3/4 cup basil microgreens
  • crushed red pepper flakes
  • fresh lemon juice
  • 1/3 cup peanuts coarsely chopped

Instructions

  • In a high-speed blender, combine the first 7 ingredients starting at low speed and gradually increasing until the mixture ius smooth and homogeneous.

  • Toss peanut sauce with cooked noodles. Stir in greens and the basil microgreens, reserving some for garnish. Sprinkle with the red pepper flakes, drizzle with lemon juice, and garnish with peanuts and basil microgreens.
