Pea Shoot Pesto

Ingredients

  • 3/4 cup Pine Nuts
  • 3 cups Root 'N Shoots Pea Shoots
  • 1/2 cup Roots 'N Shoots Cilantro Microgreens
  • 1/4 cup Grated Parmesan Cheese
  • 2 cloves Garlic, Chopped
  • 3/4 tsp Kosher Salt
  • 1/2 cup Extra Virgin Olive Oil

Instructions

  • Using a food processor: Combine pea shoots, ½ cup toasted pine nuts, cilantro, Parmesan, garlic, and salt. Pulse until roughly chopped. Slowly drizzle in olive oil with the motor on low; blend well.
