Why Eat Microgreens?
In a nutshell:

- They provide excellent vitamins to help people thrive. (I realize this is the same as highly nutritious, but it bears repeating!)

Researchers at the USDA Agricultural Research Service and the University of Maryland studied the nutritional content of microgreens. They found that microgreens had four to forty times more nutrients than mature plants! Did you know that billions of people worldwide are micronutrient deficient at some level? Microgreens have extremely high micronutrient levels. Each microgreen has its own nutrient composition, but they are all amazingly nutritious.
Microgreens provide exceptional flavor, nutrition, texture, and color to salads, sandwiches, tacos, pizza, smoothies, soups, eggs, noodles, and more. They give variety and beauty to any meal with fresh, distinctive sweet and spicy flavors and vibrant reds, purples, and greens. So why microgreens? They are good and good for you! Most kids particularly like sunflower and pea shoots, but more adventurous ones love many varieties.
