Avocado Toast with Microgreens

Avocado toast is an amazing breakfast or snack with any Roots 'n Shoots Microgreens

Equipment

  • Toaster or toaster oven

Ingredients

  • 4 slices bread
  • 2 medium avocados
  • 2 cups your favorite Roots 'n Shoots microgreens We used radish and Purple Vienna Kohlrabi.
  • ½ tsp lemon infused olive oil you can soak lemons in olive oil overnight or just add lemon juice to the olive oil
  • balsamic vinegar enough to drizzle on each piece of toast
  • sea salt if desired
  • fresh grated cheese We used cotija, but parmesan or your favorite cheese will work well.

Instructions

  • Toast the bread
    4 slices bread
  • Slice the avocado in half and remove the pit. Scoop out or slice the flesh.
    2 medium avocados
  • Drizzle lemon-infused olive oil on the toasted bread.
    ½ tsp lemon infused olive oil
  • Spread the avocado over the oil.
  • Top with a generous portion of your favorite microgreens.
    2 cups your favorite Roots 'n Shoots microgreens
  • Drizzle with balsamic vinegar and top with a bit of sea salt and cheese as desired.
